How to make Mini Pavlovas on the AGA

Very quick and easy, this delicious dessert can be prepared well in advance and even kept in the cupboard and fridge as an emergency pudding!

Very quick and easy, this delicious dessert can be prepared well in advance and even kept in the cupboard and fridge as an emergency pudding!

Ingredients:

  • 4 medium egg whites (better if the eggs are a week or so old)
  • 120g caster sugar
  • 110g icing sugar
  • ½ tsp. vanilla extract
  • 1 tsp. cornflour
  • 1 tsp. white wine vinegar
  • Double whipped cream
  • Mixed fresh fruit (strawberries, blueberries, blackberries)

How to make it:

  1. Line the plain cold shelf with bake-o-glide.
  2. Whisk the egg whites and the caster sugar until firm, and then add the icing sugar, vanilla, cornflour and vinegar, and beat again until combined.
  3. Pipe the meringue mix onto the sheet in the shape of a nest
  4. Place onto the lowest runners for about 2 hours until the meringues are dry.
  5. Place on top of the simmering plate covered with a tea towel until required.
  6. Then pipe whipped cream onto the top and decorate with mixed fresh seasonal fruit.

Preparing ahead

When left at room temperature and stored properly in an airtight container, meringues can stay fresh for 2 weeks. If the dessert was put in the freezer, it can last up to 3 months.
