Rhubarb Fool For A Crowd
A great, easy to make but impressively decadent, Rhubarb Fool for a crowd.
If like us you're getting plenty of rhubarb in your garden or veg boxes you'll be looking for ways to use it. This recipe is perfect for preparing a little in advance and ideal for larger crowds, whether that's a Friday night dinner party, a Saturday BBQ or a Sunday lunch with all the family.

You'll need:
1-1.2kg rhubarb, cut into 1cm slices
160-240g sugar (depending on how sweet your tooth is)
600ml double cream
500g Greek style yoghurt
400g tin/carton of ready-made custard
100g pistachios, chopped
Method:
- Set your oven to Roasting.
- Mix the rhubarb and sugar together and roast on a shallow baking tray in the middle of the Roasting oven for about 15 minutes.
- Spoon the roasted rhubarb, along with all the juices, into a bowl and stir to break up the fruit. Leave to cool.
- Whip the cream and yoghurt together until stiff and fold in the custard.
- Fold in 3/4 of the rhubarb into the creamy mixture.
- Spoon half the remaining rhubarb into the base of your trifle bowl and spread it all over the base. Pour over half of the cream.
- Add the remaining rhubarb followed by the rest of the creamy mixture.
- Using a knife swirl the fool to create a lovely rhubarb ripple.
- Sprinkle the pistachios on top.
This is lovely served with some shortbread, or almond biscuits.
