Ingredients:

- 225 grams all-purpose flour
- 2 tablespoons caster sugar
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 240ml buttermilk
- 1 large egg
- 30 grams unsalted butter, melted
- 1 teaspoon vanilla extract
- Butter or cooking spray for greasing the hot plate
- Maple syrup, fresh fruit, or other toppings of your choice

This recipe typically makes about 8-10 medium-sized pancakes, depending on how large you make them. You can adjust the size of the pancakes to make more or fewer accordingly.

Directions

1. Preheat the simmering hotplates so that they are up to temperature when you finish your preparation. Simply line the hotplate with the Bake-O-Glide® when you are ready to cook. If using induction, use the medium setting and a compatible frying pan. You can also use a frying pan if y

2. In a large mixing bowl, whisk together the flour, sugar, baking powder, bicarbonate of soda, and salt.

3. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.

4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay. Let the batter rest for about 5 minutes while the hotplates heats up.

5. Place a piece of Bake-O-Glide® onto the hotplate to prevent sticking. If you don't have a Bake-O-Glide®, you can lightly grease a frying pan with butter or cooking spray.

6. Using a ladle or measuring cup, pour about 60ml of batter onto the hotplate for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

7. Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.

8. Transfer the cooked pancakes to a plate and cover with a clean tea towel to keep warm while you cook the remaining batter.

9. Repeat the process with the remaining batter.

10. Serve the pancakes warm with your favourite toppings, such as maple syrup, fresh fruit, whipped cream, or chocolate chips and enjoy!
