Cherry Tomato Tarte Tatin

A savoury take on a classic French dessert using traditional Italian flavours of tomato and basil. Best served outside in the sunshine with your nearest and dearest. This recipe was produced and presented by Penny Zako as part of our live online AGA Cookery Demonstration for April.

Ingredients

1 tsp. olive oil

1 tbsp. butter

1 tsp. sugar

250g cherry tomatoes

Dried herbs or a handful of fresh oregano, marjoram and basil - finely chopped

For the pastry:

4oz plain flour

2oz butter

2oz grated cheese (any grated variety such as cheddar or red Leicester)

4 spring onions – finely chopped

For the basil cream:

100g mascarpone cheese

1tsp. lemon juice

handful of fresh basil leaves- chopped

Salt and pepper

Method

  1. Make the pastry- place the flour, cheese and butter in the food mixer and blend to form a breadcrumb consistency, keeping the machine working add 2-3 tbsp. of water to form a dough.
  2. Form into a ball and wrap in clingfilm and chill in the fridge for 30 minutes.
  3. Use the ceramic 22cm frying pan and heat the olive oil and butter on the simmering plate add the sugar and stir until it caramelizes.
  4. Add the tomatoes to the pan and cook for a couple of minutes until they are coloured on the underside.
  5. Remove from the heat stir in the herbs and allow to cool.
  6. Roll out the pastry so that it is slightly bigger than the pan, put it over the tomatoes and tuck the edges down the sides of the pan.
  7. Bake towards the top in the roasting oven for 15-20 mins until golden.
  8. Remove from the oven and allow to cool for at least 5mins before inverting it onto a plate.
  9. Serve with a basil cream and season with salt and black pepper.
