September Recipe of the Month- Slow cooked Lamb Shanks

Penny Zako has created this delicious Slow Cooked Lamb Shanks with Olives and Tomatoes recipe which she shared with us in our August live AGA cooking demo via ZOOM.

Slow cooked Lamb shanks with tomato, olives and summer herbs

INGREDIENTS

2 lamb shanks or 450g diced lamb

4 shallots sliced

4 anchovies chopped

2 crushed garlic cloves

12 pitted black olives halved

1 glass of red wine

400g chopped Italian tomatoes

2 sprigs of rosemary, marjoram and oregano

Splash of balsamic vinegar

Olive oil

METHOD

  • Place the splash shield on the boiling plate inner lid. Sit the cast aluminum casserole or roaster on the boiling plate add some olive oil; brown the lamb shanks all over, remove and place into a casserole or roaster lid.
  • Wipe the pan with some kitchen paper and then heat some fresh oil on the simmering plate, add the shallots and crushed garlic cloves cook until softened, stir in the chopped anchovies and then tip in the chopped tomatoes and the red wine.
  • Cook until bubbling and then add the olives and balsamic vinegar, stir to combine and then add the shanks with the herbs then place the lid on top.
  • Cook in the simmering oven for at least 3 hours or until the meat is falling from the bones.
  • Serve with creamy basil and chilli mash.
