Recipe of the Month- Leeks in Sparkling Wine and Thyme sauce
We had such a great response to this recipe in our zoom Christmas AGA cooking demonstration with Penny Zako we wanted to share it in our blog with you all. This cooking dem was in collaboration with the Alder Ridge Vineyard and their award winning wine.
The recipe is very simple in an AGA cooker and simply delicious. A great vegetable dish to complement your Christmas dinner.
INGREDIENTS:
6 leeks- sliced into rings
300ml whole fat milk
200ml sparkling wine
25g butter
1 tbsp plain flour
vegetable stock cube
sprigs of thyme
METHOD:
Place the butter, stock cube, flour and milk in a pan on the simmering plate on your AGA and combine together using a whisk until it starts to thicken.
gradually whisk in the sparkling wine to form a smooth sauce
put the cooked leeks into a Portmerion dish and pour over the sauce, sprinkle over some fresh tyme and serve or chill to re heat later.
