October- Recipe of the month- Blackberry Scotch Pancakes

Have you been out berry picking?

This is the perfect recipe for a delicious breakfast to cook on your AGA using juicy blackberries. Penny Zako created this recipe and shared it in our September online cooking demonstration. It is so simple quick and easy.


200g / 7 oz plain flour

1 tsp cream of tartar

½ tsp bicarbonate of soda

1 tsp golden syrup ( extra to drizzle over )

150g Blackberries

1 lemon zested

200ml / 7fl oz full fat milk

1 large free range egg


  • Place the flour, cream of tartar and the bicarbonate of soda into a bowl, mix well and add the golden syrup with half of the blackberries and the lemon zest.
  • Mix the egg and the milk together then add gradually to the mixture until a smooth batter is formed.
  • Place the circular piece of bake o glide onto the simmering plate and put a spoonful at a time onto the plate. Once bubbles appear on the top of the pancake turn over and cook the other side.
  • Once golden place on a warm plate covered with foil until all the mixture is used up.
  • Assemble into a stack drizzle with golden syrup and remaining blackberries.
