These are brilliant for Sunday tea, lunchboxes, afterschool snacks, picnics...essentially any time you need a little something.
To make 12-16 muffins you'll need:
300g plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
2 eggs
250ml milk
85g butter, melted
195g tin of sweetcorn, drained
90g ham hock
Start by preheating your oven to 190C.
Using the bakers paddle in your mixer or a wooden spoon mix together the flour, baking powder, bicarb and salt. In a separate bowl mix together the eggs, milk and cooled melted butter. Slowly pour the wet ingredients into the dry ingredients and mix until you have a smooth batter. Stir in the sweetcorn and ham by hand.
Pop the mixture into a non-stick muffin tin (or use cases if you wish!) and bake in your preheated oven for about 30 minutes or until the muffins are golden brown.
These are delicious served warm with soft cheese.
