Crab & Avocado Burritos with Zingy Chilli Salsa

Firstly, apologies for the rubbish photograph. I was too busy scoffing to take a decent one...that's a good sign right?

These burritos are a zingy, spicy, tasty treat and I'm sure you'll absolutely love them.

To make 4 burritos, so for two adults, you'll need:

2 shallots, finely diced

2-3 limes

2 tsp salt

2 tsp sugar

3 green chillies

large bunch of coriander

large bunch of mint

4 tortillas

1 ripe avocado

200g white crabmeat

Start by making your chilli salsa. Place the finely chopped shallots into a small bowl and squeeze your limes over them, ensuring all the onion is covered in the acidic fruit juice. Leave to one side for 10 minutes or so to macerate. The onions will become translucent and lose their harsh taste, becoming sweet and delicious. In the meantime get the rest of your salsa prepped by finely chopping the chillies, coriander and mint.

Gently fry the tortillas to soften them, do it over a medium heat as you don't want them to get crispy (if they do just break them up and treat the resulting tortilla chips as a pleasant surprise), placing to one side under a tea towel.

Once the onions and lime juice have done their thing stir in the salt, sugar and chopped chillies and herbs. Taste and adjust the salt/sugar/lime juice as necessary.

Divide the avocado and crabmeat between the four warmed tortillas, give each a generous serving of the salsa and wrap into burritos.
