This is a really sweet little recipe that’s perfect for getting children involved in baking some treats for Valentine’s Day.
For about 18 biscuits you’ll need:
250g softened unsalted butter
140g caster sugar
1 egg yolk
2 tsp vanilla extract
300g sifted plain flour
3 tsp pink food colouring
100g white chocolate chunks
Preheat your oven to 180C.
Firstly beat together the butter and sugar until light and fluffy, then mix in the egg yolk and vanilla.Once all combined add the flour.I tend to do this in thirds but that’s merely to make my life a little easier and less messy – you could actually just plonk the whole lot in and it would be fine.
Now it’s time to add your colouring!I added 3 teaspoons of pink colouring to mine and they came out a suitably romantic shade of pastel pink but add as much or as little as you like.Truthfully my three young sons would have preferred something a bit brighter…and probably a bit more blue.
Finally stir in the chocolate chunks.You may need to use your hands to bring the mixture together at the end.
Depending on time, skills, number of children ‘helping’ and many other factors decide how you want you finished biscuits to look.I’m an inherently lazy cook so take ping-pong sized balls of dough which I then flatten slightly on the baking tray. This mixture is also perfect for rolling out and using cutters with.
