Prawn Cocktail Pasta
This is another recipe that falls under my ‘easy meals from the freezer’ category. Nothing has to be taken out of the freezer ahead of time making it the prefect dish for impromptu visitors (especially of the little variety).
For 4 adults or 8 children you’ll need:
500g pasta (I use whatever I have to hand, in this instance it was Penne)
2 tbsp tomato puree
1 tsp garlic paste
1.5 tsp chilli paste
250g cooked, peeled, frozen prawns
250g frozen peas
200g crème fraiche
Cook your pasta as per the packet instructions.
Put a glug of olive oil into a pan and fry off the tomato puree, garlic paste and chilli paste for 2-3 minutes. With regards the chilli paste I find this amount gives a tiny hint of warmth to the dish which is about as far as I push it with my little ones at the moment. Obviously if you want to add more kick to it, fill your boots!
Add the frozen prawns and peas to the oily paste mix and cook until they are piping hot. Stir in the crème fraiche to create the marie rose cocktail-esque sauce before draining your cooked pasta and mixing it in.
A little note about the crème fraiche. I find that it freezes really well, just in the tub you buy them in. In an ideal world you would allow it to thaw before using it but when pushed I’ve found I can blast it in the microwave for 2-3 minutes and use it like that. Even if it does split at this point, once it’s all cooked through in the pan you’d never notice.
