Looking for different recipes to try out for my son’s lunch box I stumbled on this idea on Pinterest one day. I’ve tweaked a few recipes I ended up finding plus adding bits myself and what I’ve ended up with is a sort of flat muffin (I’ve called them Buns but truthfully I cant really think of a suitable noun). It’s a nice, easy bake and they freeze really well so are a great standby for making lunches (either in or out of a box) a little more interesting.
To make 12 you’ll need:
120g self raising flour
1 egg, whisked
½ tsp dried oregano
1 cooked sausage, chopped
2 tomatoes, deseeded and chopped
70g mozzarella, diced or grated
Preheat your oven to 190C.
Sift the flour into a bowl.In another container mix the milk and egg together. Slowly add the wet ingredients to the flour ensuring you avoid too many lumps. Once you have your batter add the rest of the ingredients and stir them in well.
Pour into cake cases in a muffin tin and bake for about 20-25 minutes.
They don’t rise up very much, but that isn’t really the point of them. They should be just slightly puffed and golden brown.Back to Recipes
