AGA Recipe: Blueberry Breakfast Muffins

Blueberry Breakfast muffins

Ingredients

300ml sunflower oil

100g bran

300ml whole milk

300g self-raising flour

2tsp bicarbonate of soda

1tsp baking powder

3 eggs

160g golden caster sugar

85g muscovado sugar

200g blueberries

Method

Line a 12 cup muffin tin with paper cases.

Mix the bran and the milk. Leave to one side and in a bowl combine the flour, bicarbonate of soda and baking powder; beat in the eggs with the sugars and oil.

Fold in the bran mixture and then the blueberries.

Spoon the mixture into the cases and bake in you AGA Cooker's baking oven for 25-35mins until risen and golden.
