American Muffins

Ingredients

8oz (225g) plain flour
4 tsp baking powder
2oz (50g) sugar
1/2 tsp salt
1 egg, beaten
1/2 pint (250ml) milk
3 tbsp melted margarine

Instructions

Sift the dry ingredients, mix the egg, milk and margarine. Add all at once to the mixture and stir until the dry ingredients are just moistened but not smooth - the batter will be lumpy. Fill greased muffin tins 2/3 full with the mixture.
Bake on the grid shelf on the floor of the roasting oven for 15-20 minutes until well risen and brown.
Best eaten warm.
