AGA Lemon Curd

Ingredients

Rind and juice of 1 or 2 lemons
2oz butter - unslated
6oz caster sugar
1 whole egg and 3 egg yolks

Instructions

Put grated rind and juice of lemons into a jug with the butter and sugar, cover with cling film and put into the simmering oven. Heat for 30 minutes until the sugar and butter have melted. Remove from oven and add the egg and egg yolks and beat with an electric whisk.
Cover and return to the oven for 1-2 hours.
